Appearance 一种类胡萝卜素色素。深紫色晶体或结晶性粉末。熔点约210℃(分解)。对氧及光不稳定。需贮存于充惰性气体的遮光性容器内。溶于氯仿(10%)。微溶于植物油(0.005%)、丙酮(0.03%)。不溶于水、乙醇、丙二醇。稳定的工业产品为溶于油脂或有机溶剂中的溶液形式,或水分散性的橙至红色粉末或颗粒形式。着色后色调不受pH值影响,对日光亦相当稳定,不易褪色。 天然品存在于某种蘑菇、甲壳类、鱼类、藻类、蛋、血液、肝脏等中。

  • 用途一:食用橙色色素,用作饮料、冰激凌、华夫等无辅料饼干k调味酱、番茄加工品、肉类加工品等。适量添加于白色蛋糕预制粉,可带杏子色调,烘烤后色素残留率可达96%。猪肉制的香肠中添加11mg/kg可得与牛肉制品相同的色调。
  • 鉴别试验:溶解性不溶于水;不溶于乙醇;几不溶于植物油;溶于氯仿。按OT-42方法测定。 在环己烷溶液中,于468nm和472nm波长处有最大吸收峰。 类胡萝卜素阳性试验在丙酮溶液中的颜色,在相继添加5%亚硝酸钠溶液和1mol/L硫酸后消失。
  • 使用限量:FAO/WHO(1984,mg/kg):食用油脂按GMP;小虾、龙虾罐头及速冻品,肉汤、羹,30;果酱和果冻200;冷饮100。 FDA,§73.75(2000):30mg/456g各类食品。 日本规定:在橙汁饮料中的添加量为1~5g/1000L;冰激凌中为10~30mg/kg;番茄汤料≥6mg/kg;番茄酱1mg/1.5g番茄固形物。
