Appearance 无色至白色斜方晶系板状结晶或白色结晶性风化粉末。无臭或有轻微气味。昧极甜,即使在10000倍的水溶液中仍有极强甜昧,甜味阈值约0.00048%。在稀溶液中的甜度约为蔗糖的500倍。浓度稀时呈甜味,浓时(大于0.026%)有苦味,故单独使用时的浓度应低于0.02%。在酸性条件下加热,甜味消失。并可形成苦昧的邻氨基磺酰苯甲酸。易溶于水(1g/1.5m1),微溶于乙醇(1g/50m1)。
